Green Goddess Coleslaw with Cashew Mayo

You just can't go wrong bringing coleslaw to a Summer barbecue.... Especially if your offering is a little different to the norm!

This divine Green Goddess Coleslaw is a delicious, refreshing alternative to the usual cabbage-and-carrot version. 

Apple and mint are a divine combination. This coleslaw is crunchy and sweet - and the Cashew Mayo we use for the dressing is out of this world. In fact, I dare you not to eat it by the spoonful! Click here for the recipe, or see below. For a lighter salad you can dress it with apple cider vinegar and olive oil.

Ingredients

Coleslaw

1/4 Green Cabbage, finely shredded
2 Granny Smith (green) apples, cut into match sticks
1/4 celeriac root, grated
1 white onion, diced
1 green onion, finely sliced
1 bunch mint leaves, finely sliced (discard stems and stalks)

Cashew Mayo

150g raw cashews
Juice of one lemon
1/4 cup apple cider vinegar
1 Tablespoon olive oil
1 teaspoon pomegranate molasses (or honey, or maple syrup!)
1/2 cup water
Salt and Pepper to taste

Method

Cashew Mayo

Place all Cashew Mayo ingredients in Vitamix or other high speed blender and blend until smooth.

Green Goddess Coleslaw

Place cabbage, apples, grated celeriac, green and white onion and 3/4 of the mint in a large bowl with Cashew Mayo.
Toss until well combined.

Serve sprinkled with the remaining mint.
