Herbed Labneh Balls

This is one of my favourite ways to serve Labneh. Not only is it delicious, but it encouraged myself and my loved ones to eat lots of veggies! 

Ingredients

300g home made labneh
1 generous handful of finely chopped herbs of your choice. I have tried every imaginable combination of herbs with this recipe and really recommend you use a combination of Parsley, Mint, Dill and Chives. Use only the leaves (discard any stalks!).
OPTIONAL (but HIGHLY recommended!): 1 clove garlic, peeled and crushed
OPTIONAL: 1-2 teaspoons lemon zest
Salt and Pepper to taste

Method

Using a knife or large spoon, portion your labneh into equal small portions.

Take each portion and roll between clean hands until a ball is formed. Repeat until all labneh is used.

Place your chopped herbs onto a plate with salt, pepper (and zest and crushed garlic if you are using it).

Roll balls in chopped herbs.

Place herbed labneh balls on a plate and drizzle with extra virgin olive oil.

Serve with crackers, crusty bread or as part of a mezze platter.
