Rainbow Slaw

One of the best things you can do for your health is to eat a rainbow of coloured vegetables each day. This divine Rainbow Slaw is an delicious way to do just that!

And the Cashew Mayo we use to dress it is addictive! In fact, I dare you not to eat it by the spoonful! Click here for the recipe, or see below.

This recipe males a LOT of Rainbow Slaw, so it's great to take to a big barbecue. If you don't want a mountain of coleslaw I recommend you halve the quantities.

Ingredients

Coleslaw

1/4 Red Cabbage, finely shredded
1/4 Green Cabbage, finely shredded
1/4 bunch kale, de-stemmed and finely shredded
1 red apple, cut into match sticks
1 green apple, cut into match sticks
3 carrots, grated
1 red capsicum, julienned
1 yellow capsicum, julienned
1 red onion, diced

Cashew Mayo

150g raw cashews
Juice of one lemon
1/4 cup apple cider vinegar
1 Tablespoon olive oil
1 teaspoon pomegranate molasses
1/2 cup water
Salt and Pepper to taste

Method

Cashew Mayo

Place all Cashew Mayo ingredients in Vitamix or other high speed blender and blend until smooth.

Rainbow Slaw

Place red and green cabbage, kale, apples, grated carrots, julienned capsicums and onion in a large bowl and toss together.
Drizzle with Cashew Mayo

Serve and enjoy!

NOTE: Whilst this salad is delicious with the Cashew Mayo, for a lighter salad it can be simply dressed with a mix of olive oil and apple cider vinegar.
