I think I was somewhere deep within the Pinterest vortex when I first came across roasted radishes. And the idea just didn't appeal. But we had a huge crop of radishes and I thought "why not?".

And the result was actually quite lovely. They are a just a little bitter with a hint of sweetness. The flavour is reminiscent of roast turnips.

Roasted Radishes will never be my fave roasted dish (my all-time absolute favourite is HERE, and you must try it by the way). But having said that, I will not definitely add radishes to a pan of veggies to roast.

I tried them "al dente" with a bit of crunch, and also roasted them for a longer period until they had completely softened, and I think I prefer the latter.

Ingredients

Radishes, washed, scrubbed and chopped
Olive Oil
Salt

Method

Toss radish pieces in olive oil and salt until well coated
Spread out on a roasting tray
Roast in a pre-heated oven (180 degrees celsius) for 30 minutes or until cooked to your liking.
Turn after 15 minutes.

Serve and enjoy!
