I just adore mushrooms! They are one of my favourite ingredients, so it's lucky they are also very healthy for you!
This is one of my fave super-fast delicious meals!
2 cups quinoa
4 cups sliced mushrooms (use a variety!)
2 onions, sliced
2 cloves garlic, minced
2 tablespoons olive oil
4 spring onions sliced
1 sprig fresh thyme (optional)
Salt and pepper to taste
Rinse quinoa and cook for 15 minutes. To speed the cooking process I boil the kettle and has he water already boiling before I add the quinoa to the pot.
Place mushrooms, onion, garlic and olive oil in a large frying pan, saute on high for a minute or two, then lower heat, cover and cook on a low heat for 20-30 minutes.
Add the quinoa once it is cooked and green onion and mix together.
Season with salt and pepper to taste.
