This ticks all my boxes for a fast, healthy, delicious mid-week meal. It's great if you are watching your intake of refined carbs. And it's a great way to make sure you are getting enough veggies!
400g boneless chicken thigh fillets, finely sliced
1 teaspoon chilli powder
1 teaspoon ground cumin
1 teaspoon salt
1/2 teaspoon black pepper
1 green capsicum, finely sliced
1 red capsicum, finely sliced
1 onion, finely sliced
12 cos lettuce leaves, washed
1 avocado, diced
Place sliced chicken in a bowl. Add in chilli powder, cumin, salt and pepper. Toss to coat.
Heat 2 teaspoons olive oil in a frying pan. Add chicken and saute until cooked through.
While chicken is cooking, add capsicum and onion to another pan with a little olive oil and saute until onion is translucent. (Or you can just put everything in the one pan - less washing up!).
Arrange lettuce leaves on a plate. Top with capsicum, onion and chicken, and garnish with diced avocado.
