My test of a good dressing is whether it is so delicious I could just DRINK it! This dressing definitely satisfies that test!
1 Mango plus extra bits from the mangoes used in the salad
Juice of one lemon
1 tablespoon apple cider vinegar
1 mild red chilli, or dried chilli flakes. Tip: Make sure you add a small amount of chilli to your dressing at first, and keep adding it in by increments until you have achieved your desired level of heat.
1 tablespoon olive oil
Place all ingredients into a high speed blender and blend until smooth.
Remember to gradually add in your chilli (see ingredients, above)!
Taste, and season with salt, pepper or a little extra chilli if desired.
