Mediterranean Baked Fish

This dish is fancy enough to serve when you have company, delicious, nutritious and super-fast to throw together. What's not to love?


2-4 white fish fillets (I have used garfish fillets here. They were quite small so I doubled the amount)
20-30 cherry tomatoes
10-15 black olives (preferably pitted)
10-15 green olives (preferably pitted)
1-2 tablespoons capers
OPTIONAL: 1 mild red chilli, finely sliced
OPTIONAL: 1 mild green chilli, finely sliced
Juice of one lemon
2 teaspoons lemon zest
1 tablespoon olive oil
Salt and pepper to taste


Line a baking tray with baking paper
Arrange fish fillets over tray
Spray or drizzle with olive oil
Arrange tomatoes, olives, capers and chillis over the top
Drizzle with lemon juice and sprinkle lemon zest, salt and pepper over the top

Bake in a pre-heated oven (180 degrees celsius) for 15-20 minutes, depending on the thickness of your fish fillets.
