Pineapple and coconut would have to be one of the most divine flavour combinations ever discovered! And this simple dessert is as delicious as it is simple to make. It is a super-healthy alternative to store-bought sorbet as it contains only a fraction of the sugar.
One pineapple, peeled, cut into chunks and frozen
Water and flesh of one young thai coconut (or one can of coconut milk, refrigerated)
1/2 teaspoon Vanilla paste or powder
1-2 teaspoons maple syrup (optional)
Place all ingredients into a Vitamix or other high speed blender.
Blend until a creamy consistency is achieved.
Taste your sorbet before adding sweetener - if you have a nice sweet pineapple you may find that you do not need to add any extra sweetness.
This sorbet is best served straight after making it. If you put it in the freezer overnight it gets too hard to eat straight from the freezer.
Serve immediately and enjoy!
