Plant Strong Lemon Mousse


Mousse desserts are notoriously high in saturated fats. But this one is made with tofu so it's high in plant-based protein and contains no saturated fat. And the best part is that it takes less than 10 minutes to prepare!

Serves 4


1 x 250g pack of tofu - you can use any kind of tofu but I find that firm tofu works best due to the amount of liquid (lemon juice) added
1/2 cup raw cashews, soaked for at least 30 minutes
Zest of one lemon
Juice of 2 lemons
To sweeten: 2 tablespoons to 1/4 cup Maple syrup (depending on desired level of sweetness)
Jenna's tip: I usually use 1-2 tablespoons of maple syrup and then "boost" the sweetness with a couple of drops of liquid stevia. I find that using Stevia on its own can give an unpleasant aftertaste, but using just a couple of drops to boost sweeteners like maple syrup or honey works a treat!
OPTIONAL: 1/4 teaspoon turmeric (for colour!)


Place all ingredients into a high speed blender like a Vitamix
Pulse until all ingredients are combined and then blend until smooth
Taste and adjust the sweetener and/or lemon if needed
Spoon into small glasses or dishes and refrigerate for 1 hour (if you can wait that long - we often serve this straight from the blender at my place!)
