We started making veggie stock as a way of minimising our food waste. But it also gives such great flavour to our dishes. We cook quinoa in it, and add it to soups and stews.
And it's stupidly easy to make. Just place your veggie scraps in a bowl, then place them in a pot of water, bring to boil then simmer on a low heat for 20-30 minutes. I usually put my veggie stock on just as we are sitting down to dinner and leave it gently simmering while we're eating. By the time dinner is finished, my veggie stock is ready to drain, cool and put in the fridge ready to use for tomorrow night's dinner!
