If you've followed this blog for a while, you know I LOVE to find ways to "supercharge" the food we eat. This recipe gives a simple pumpkin mash a "nutritional upgrade" with the addition of by lentils, onion, garlic, ginger and turmeric. 


Half a pumpkin, peeled and cubed
One onion, diced
1 clove garlic, crushed
1.5cm nob of garlic finely grated
1 cup red lentils, cooked and drained.
1/2 tsp dried turmeric, or 1 tsp fresh turmeric, finely grated.


Boil pumpkin until soft
While pumpkin is cooking sauté onion, garlic, ginger and turmeric in a little olive oil.
When pumpkin is cooked, drain cooking water and add cooked red lentils, onion, garlic and ginger. Mash with a fork, stick blender or food processor (depending on whether you want a smooth or "rustic" consistency).
Season with salt and pepper to taste.


Hint: for a spicy boost, add a little chilli!
