My husband loves seafood! And fortunately he loves to cook it too. This recipe features regularly on our dinner table.
A dozen scallops
2cm nob of fresh ginger, finely grated
1 chilli, de-seeded and finely chopped
1 teaspoon sesame oil
1 tablespoon olive oil
Salt and pepper
Coriander for garnish
Heat olive and sesame oil, ginger and chilli to pan and heat to medium
Add scallops and sear for 30 seconds each side
Reduce heat to low and allow to cook through
Serve garnished with coriander.
