I've been tinkering around with a home made vegan/egg-free mayonnaise for a while, and today I nailed it! Even if you are an egg-guzzlin' omnivore, you will love this one! It's smooth, creamy, tangy, with a tiny hint of sweetness - and I dare you not to eat it by the spoonful!
150g raw cashews
Juice of one lemon
1/4 cup apple cider vinegar
1 Tablespoon olive oil
1 teaspoon pomegranate molasses*
1/2 cup water
Salt and Pepper to taste
Place all ingredients in Vitamix or other high speed blender.
Blend until smooth.
Taste and tinker with the flavours a little until you have it just the way you like it!
* If you don't have pomegranate molasses, you can use maple syrup or honey.
As you can see below, it's super-versatile and makes lots of different salads and veggies sing!
