Pineapple and coconut would have to be one of the most divine flavour combinations ever discovered! And this simple smoothie is as delicious as it is simple to make.
One pineapple, peeled and cut into chunks
Water and flesh of two young thai coconuts (or one small - 270ml - can light coconut milk plus 1 1/2 cups water)
1/2 teaspoon Vanilla paste or powder
1-2 teaspoons maple syrup (optional)
Place all ingredients into a Vitamix or other high speed blender.
Blend until a smooth consistency is achieved.
Add in extra water if it is too thick.
Taste your smoothie before adding sweetener - if you have a nice sweet pineapple you may find that you do not need to add any extra sweetness.
Serve and enjoy!
