This is one of my favourite Summer fruit combinations!
I'm not a big fan of fruit juices or fruit smoothies as I think fruit is best enjoyed whole. But on a sweltering Summer's day, NOTHING beats an ice cold fruity slushie! If you are keeping an eye on your sugar and/or carb intake just add in 2-3 ribs of celery and some extra mint. You will hardly notice!
1/2 pineapple, peeled, cut into chunks and frozen overnight
1/4 watermelon, rind and seeds removed, cut into chunks
Leaves from 2-3 large sprigs of mint. Make sure you use leaves only, no stalks.
Optional: if you are watching your sugar intake, add in 2-3 ribs of celery (chopped) and some extra mint leaves.
Place all ingredients into a high speed blender like a Vitamix.
Blend until smooth.
Pour into glasses and enjoy!
