This is a divine combination. In fact I might go so far as to say it is the perfect flavour combination for Summer.
One dozen prawns, peeled and deveined (with tails left on)
1 jalapeno chilli, de-seeded and finely diced
1 red onion, finely diced
1/2 red capsicum, finely diced
1/2 yellow capsicum, finely diced
1/2 green capsicum, finely diced
1 punnet plum or red cherry tomatoes, finely chopped
1 lebanese cucumber, de-seeded and finely diced
3 green onions, finely sliced
1 avocado, diced
Juice of one lime
1 tablespoon apple cider vinegar
1 tablespoon extra virgin olive oil
Salt and pepper
Combine all salsa and dressing ingredients in a bowl.
Mix to combine.
Place in a serving bowl. Top with prawns, and garnish.
