I've been testing out recipes for a Healthy Thanksgiving I'm hosting for an American friend next month, and came up with this recipe for our festivities. It's so delicious I won't just be saving this for Thanksgiving!
3-4 sweet potatoes, peeled and chopped into evenly-sized pieces
3-4 teaspoons mixed spice (Mixed Spice is usually made of cinnamon, nutmeg, ginger and allspice. If you don't have Mixed Spice, cinnamon is fine. I generally use one teaspoon of mixed spice per sweet potato)
One green apple, finely diced
1 tablespoon olive oil
Salt and pepper
150g pecan nuts
2 tablespoons maple syrup

Toss sweet potato pieces in olive oil, mixed spice, salt and pepper
Place in a baking tray
Bake in a pre-heated oven for 30 minutes.
Combine pecan nuts and maple syrup in bowl.
Toss to combine and set aside
Remove sweet potato from oven
Top with diced apple and maple pecans
Continue baking until sweet potato is cooked through.
