This is one of my favourite Summer salads. It is delicious on its own, and is also a refreshing accompaniment to seafood and meat dishes. And it's a great way to eat a rainbow of healthy phytonutrients!
1 jalapeno chilli, de-seeded and finely diced
1 red onion, finely diced
1/2 red capsicum, finely diced
1/2 yellow capsicum, finely diced
1/2 green capsicum, finely diced
1 punnet plum or red cherry tomatoes, finely chopped
1 lebanese cucumber, de-seeded and finely diced
3 green onions, finely sliced
1 avocado, diced
Juice of one lime
1 tablespoon apple cider vinegar
1 tablespoon extra virgin olive oil
Salt and pepper
Combine all ingredients in a bowl.
Mix to combine.
NOTE: if you are making this well ahead of eating it, leave out the avocado.
