This is a delicious side dish with fish, chicken or meat but is also substantial enough to eat on its own.
1 large bunch kale, de-stemmed and finely sliced
1 x 400g can low-salt white beans (Borlotti Beans, White Kidney Beans etc). Or if you are cooking your own beans, use 400g cooked beans
1 onion, diced
2-3 cloves garlic, minced (use as much or as little garlic as you like!)
1-2 tablespoons olive oil
Salt and pepper to taste
Saute onion and garlic in olive oil until the onion is translucent
Add the kale in batches. It will cook down.
Simmer for 10-15 minutes or until kale has softened and cooked through.
Season with salt and pepper to taste.
Serve and enjoy!
