This salad is one of my faves.
400g baby spinach, washed and drained
2 punnets of button mushrooms (approx 300g), de-stemmed and finely sliced
1 1/4 cups of cooked quinoa (equivalent to 1/2 cup uncooked quinoa)
Juice of 2 lemons
1 tablespoon lite soy sauce or tamari
1 tablespoon miso paste
1 teaspoon sesame oil
1 tablespoon maple syrup or honey
1 clove garlic, crushed
1 red onion, finely diced
Combine all marinade ingredients in a bowl and whisk until fully combined.
Add sliced mushrooms to marinade and leave to sit for an hour. Stir occasionally to ensure all mushrooms are marinated.
Add quinoa to mushroom marinade and mix to combine.
Arrange baby spinach in serving bowl or platter.
Spoon mushroom and quinoa mix over.
Drizzle with remaining dressing/marinade.
